- 200 gm smash biscuits
- 100 g melted butter
- 500 g cream cheese
- 200 g sugar
- 250 ml whole liquid cream
- 1 teaspoon vanilla extract
- 200 g fresh blueberries
- 150 g blueberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the smash biscuits and melted butter until combined, then press this mixture into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese and sugar together until smooth.
- Add the whole liquid cream, vanilla extract, and lemon juice, mixing until fluffy.
- Carefully fold in the fresh blueberries.
- Pour the cream cheese mixture over the biscuit base and smooth the top.
- Spread the blueberry jam evenly over the top.
- Bake for 45-50 minutes until set. Let it cool and refrigerate for at least 4 hours before serving.
Notes
For best results, ensure cream cheese is at room temperature before mixing. Serve chilled and garnish with fresh blueberries or blueberry jam.
