Ingredients

  • 200 gm smash biscuits
  • 100 g melted butter
  • 500 g cream cheese
  • 200 g sugar
  • 250 ml whole liquid cream
  • 1 teaspoon vanilla extract
  • 200 g fresh blueberries
  • 150 g blueberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the smash biscuits and melted butter until combined, then press this mixture into the bottom of a springform pan.
  3. In a separate bowl, beat the cream cheese and sugar together until smooth.
  4. Add the whole liquid cream, vanilla extract, and lemon juice, mixing until fluffy.
  5. Carefully fold in the fresh blueberries.
  6. Pour the cream cheese mixture over the biscuit base and smooth the top.
  7. Spread the blueberry jam evenly over the top.
  8. Bake for 45-50 minutes until set. Let it cool and refrigerate for at least 4 hours before serving.

Notes

For best results, ensure cream cheese is at room temperature before mixing. Serve chilled and garnish with fresh blueberries or blueberry jam.
