Blueberry Bliss Cheesecake Bars

Description

Delightful cheesecake bars with an oatmeal crust, fresh blueberries, and a sweet blueberry compote on top.


Ingredients

  • 4 oz unsalted butter, room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp bourbon
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 & 1/4 cups old-fashioned oats
  • 16 oz cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 eggs
  • 1 tsp vanilla bean paste (or extract)
  • 1 tbsp bourbon
  • 6 oz (about 1 cup) fresh blueberries
  • 10 oz fresh blueberries (about 1 pint)
  • 23 tbsp granulated sugar
  • 1 tsp fresh lemon juice
  • 1 tbsp bourbon

Instructions

  1. Preheat the oven to 325°F (163°C). Spray an 8×8-inch baking pan with non-stick spray and line it with parchment paper.
  2. For the oatmeal cookie crust, cream together the butter, light brown sugar, and granulated sugar until fluffy. Mix in the egg, bourbon, and vanilla.
  3. In a separate bowl, combine the flour, cinnamon, baking soda, and salt. Gradually add this mixture to the butter mixture, stirring in the oats. Press into the prepared pan and bake for 18-20 minutes. Let cool.
  4. For the blueberry cheesecake layer, beat together the cream cheese, granulated sugar, and light brown sugar until smooth. Mix in the eggs, vanilla, and bourbon, then fold in most of the blueberries.
  5. Pour the cheesecake mixture over the cooled crust and bake for 38-40 minutes until set. Let cool and refrigerate for at least 8 hours.
  6. To make the blueberry compote, cook the blueberries with sugar and lemon juice until juices release. Stir in bourbon and let thicken. Refrigerate.
  7. Cut the bars into squares and serve topped with the blueberry compote.

Notes

Best served chilled. Can be garnished with extra blueberries or whipped cream. Store leftovers in an airtight container in the refrigerator for 4-5 days.
