A fresh twist on a classic BLT sandwich, this pasta salad combines crispy bacon, juicy tomatoes, creamy cheddar, and greens for a delightful dish.

- 8 oz rotini pasta
- 6 slices crispy bacon, crumbled
- 1 cup cherry tomatoes, halved (red & yellow mix)
- 1 cup cubed cheddar cheese
- 1 cup chopped romaine or mixed greens
- 1/2 cup chopped cucumber (optional)
- 1/4 cup red onion, finely diced
- 1/2 cup ranch or creamy dressing
- Salt & black pepper, to taste
- Chopped parsley (for garnish)
Instructions
- Boil rotini according to package instructions. Drain and cool completely.
- While pasta cools, cook bacon and chop all veggies.
- In a large bowl, combine pasta, bacon, tomatoes, cheese, greens, onion, and cucumber.
- Add dressing, season with salt and pepper, and toss gently to coat.
- Garnish with parsley and serve chilled or at room temperature.
Notes
For the crispiest bacon, bake it in the oven instead of frying. You can use any cheese you like, such as feta or mozzarella. Feel free to include other vegetables for extra flavor.
