Ingredients

- 4 large hard-boiled eggs, chopped
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- Salt & black pepper to taste
- 4 romaine lettuce leaves
- 1/2 cup cherry tomatoes, halved
- 2 slices crispy bacon, chopped
- Optional: chives or paprika for garnish
Instructions
- In a bowl, mix the chopped eggs, mayonnaise, Dijon mustard, salt, and pepper until well combined.
- Spoon the egg salad mixture into the romaine lettuce leaves.
- Top the salad with bacon bits and cherry tomatoes.
- Garnish with chives or a sprinkle of paprika if desired. Serve immediately.
