Description

A fresh and delicious twist on traditional egg salad with crunchy lettuce and savory flavors of bacon and tomatoes.


Ingredients

  • 4 large hard-boiled eggs, chopped
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt & black pepper to taste
  • 4 romaine lettuce leaves
  • 1/2 cup cherry tomatoes, halved
  • 2 slices crispy bacon, chopped
  • Optional: chives or paprika for garnish

Instructions

  1. In a bowl, mix the chopped eggs, mayonnaise, Dijon mustard, salt, and pepper until well combined.
  2. Spoon the egg salad mixture into the romaine lettuce leaves.
  3. Top the salad with bacon bits and cherry tomatoes.
  4. Garnish with chives or a sprinkle of paprika if desired. Serve immediately.
