Delicious and healthy crumble bars packed with blackberries, apples, and sage. Perfect for breakfast, snacks, or dessert.
Ingredients

- 2 cups oat flour (gluten-free if required)
- 1 cup rolled oats (gluten-free if required)
- 3/4 cup coconut oil, melted
- 1/2 cup desiccated coconut
- 1/2 cup sliced almonds
- 1/2 cup coconut sugar
- 1 tablespoon lemon zest
- 1 teaspoon baking powder (gluten-free if required)
- 1 teaspoon natural vanilla extract
- 1/2 teaspoon salt
- 2 1/2 cups blackberries (fresh or frozen)
- 1 apple, grated (Granny Smith recommended)
- 2 tablespoons corn flour (cornstarch)
- 1 tablespoon sage, very finely sliced
Instructions
- Preheat the oven to 200°C (390°F) fan bake and line an 18×27 cm slice tin with baking paper.
- If using frozen blackberries, measure them into a bowl and set aside to thaw.
- In a large bowl, mix all crumble ingredients except for the melted coconut oil.
- Gradually pour the melted coconut oil over the mixture, mixing until wet and clumps together.
- Set aside a heaped cup of the mixture for topping.
- Press the remaining mixture into the slice tin evenly.
- Sprinkle corn flour over the blackberries and toss; then spread evenly over the crumble base.
- Distribute grated apple and sliced sage over the blackberries.
- Top with the reserved crumble mixture and spread it evenly.
- Bake for 30 minutes or until the topping is golden brown.
- Allow to cool and set for 1-2 hours before slicing into portions.
Notes
Store in an airtight container at room temperature for up to three days. Refrigerate or freeze for longer storage.
