Blackberry, Sage, and Apple Oat Crumble Bars

Description

Delicious and healthy crumble bars packed with blackberries, apples, and sage. Perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups oat flour (gluten-free if required)
  • 1 cup rolled oats (gluten-free if required)
  • 3/4 cup coconut oil, melted
  • 1/2 cup desiccated coconut
  • 1/2 cup sliced almonds
  • 1/2 cup coconut sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder (gluten-free if required)
  • 1 teaspoon natural vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups blackberries (fresh or frozen)
  • 1 apple, grated (Granny Smith recommended)
  • 2 tablespoons corn flour (cornstarch)
  • 1 tablespoon sage, very finely sliced

Instructions

  1. Preheat the oven to 200°C (390°F) fan bake and line an 18×27 cm slice tin with baking paper.
  2. If using frozen blackberries, measure them into a bowl and set aside to thaw.
  3. In a large bowl, mix all crumble ingredients except for the melted coconut oil.
  4. Gradually pour the melted coconut oil over the mixture, mixing until wet and clumps together.
  5. Set aside a heaped cup of the mixture for topping.
  6. Press the remaining mixture into the slice tin evenly.
  7. Sprinkle corn flour over the blackberries and toss; then spread evenly over the crumble base.
  8. Distribute grated apple and sliced sage over the blackberries.
  9. Top with the reserved crumble mixture and spread it evenly.
  10. Bake for 30 minutes or until the topping is golden brown.
  11. Allow to cool and set for 1-2 hours before slicing into portions.

Notes

Store in an airtight container at room temperature for up to three days. Refrigerate or freeze for longer storage.
