Description

Deliciously nutritious oat crumble bars featuring fresh blackberries, tart apple, and a hint of sage, topped with a crunchy oat crumble.


Ingredients

  • 2 cups oat flour (gluten-free if required)
  • 1 cup rolled oats (gluten-free if required)
  • 3/4 cup coconut oil, melted
  • 1/2 cup desiccated coconut
  • 1/2 cup sliced almonds
  • 1/2 cup coconut sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder (gluten-free if required)
  • 1 teaspoon natural vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups blackberries (fresh or frozen)
  • 1 apple, grated (Granny Smith recommended)
  • 2 tablespoons corn flour (cornstarch)
  • 1 tablespoon sage, very finely sliced

Instructions

  1. Preheat the oven to 200°C (390°F) fan bake, and line an 18×27 cm (approximately 7×10.5 inches) slice tin with baking paper.
  2. If using frozen blackberries, place them in a bowl to thaw slightly while making the crumble.
  3. In a large bowl, mix all the crumble ingredients except the melted coconut oil.
  4. Gradually pour the melted coconut oil over the crumble mixture, mixing well until it’s moist and clumps together easily when squeezed.
  5. Set aside a heaped cup of the crumble mixture for the topping.
  6. Press the remaining crumble mixture evenly into the slice tin using the back of a spoon or a drinking glass.
  7. Sprinkle the corn flour over the blackberries and toss them gently; place the blackberries evenly on top of the crumble base.
  8. Spread the grated apple and finely sliced sage over the blackberries.
  9. Use the reserved crumble mixture as a topping, spreading it out evenly in rustic clumps.
  10. Bake for 30 minutes or until the topping is a deep golden brown.
  11. Remove from the oven and allow to cool and set for 1-2 hours in the pan.
  12. Lift the uncut bars onto a chopping board using the baking paper and slice into even portions.

Notes
