Ingredients

  • 3/4 cup white chocolate chips (135g)
  • 1 cup heavy cream, cold, divided (240g)
  • 1/3 cup seedless blackberry jam (75g)
  • Regal purple gel food coloring (optional)
  • 1/3 cup powdered sugar (42g)
  • 1 tsp vanilla extract (4g)
  • 1/8 tsp fine salt

Instructions

  1. Melt 3/4 cup white chocolate chips and 1/4 cup heavy cream in a heat-proof bowl, microwaving for 45-60 seconds and stirring until smooth.
  2. Stir in 1/3 cup blackberry jam and optional purple gel food coloring until smooth.
  3. In a separate bowl, whip 3/4 cup heavy cream, 1/3 cup powdered sugar, 1 tsp vanilla extract, and 1/8 tsp fine salt until thick and holding peaks.
  4. Gently fold half of the whipped cream into the blackberry mixture, then fold in the rest.
  5. Cover and refrigerate for at least 2 hours to set.
  6. Serve chilled, topped with whipped cream and a fresh blackberry.

For optimal freshness, enjoy within 2-3 days. Be gentle when folding whipped cream to keep the mousse light and airy.
