Description

Delicious dessert featuring a creamy cheesecake layer, fruity blackberry topping, and crunchy biscuit base, all served in individual jars.


Ingredients

  • 1 1/2 cups (180g) gingernut biscuits (or digestives/graham crackers)
  • 1/2 stick (56g) unsalted butter
  • 1 1/2 cups (225g) fresh blackberries
  • 3 tablespoons caster sugar
  • Juice of half a lime
  • 1/2 teaspoon vanilla extract
  • 1 cup (240ml) double/heavy cream
  • 5 tablespoons caster sugar
  • Pinch of salt
  • 8 oz (225g) mascarpone, at room temperature
  • Juice of half a lime

Instructions

  1. Prepare the Biscuit Layer: Break the gingernut biscuits into a food processor and blitz until you have fine crumbs. Place the unsalted butter into a small, heatproof bowl and microwave in 20-second increments until melted. Pour the melted butter over the biscuit crumbs and mix until all the crumbs are coated in butter. Set aside.
  2. Make the Fruit Layer: In a medium-sized bowl, combine 1 1/2 cups blackberries, 3 tablespoons caster sugar, lime juice, and 1/2 teaspoon vanilla extract. Stir until the fruit is coated in sugar and set aside.
  3. Prepare the Cheesecake Layer: In a large bowl, add 1 cup double cream, 5 tablespoons caster sugar, and a pinch of salt. Whisk until you reach the soft peak stage; the mixture should ribbon back into the bowl and barely hold a peak. Add in the mascarpone and lime juice, whisking until everything is thick, creamy, and smooth.
  4. Assemble the Jars: Spoon 3 tablespoons of the biscuit mixture into each jar and press gently to create an even layer. Next, add 3 heaping tablespoons of the cheesecake mixture on top, smoothing it into an even layer. Finally, spoon some of the blackberry mixture on top of the cheesecake layer.

Notes

Use fresh blackberries for the best flavor. Adjust sweetness by adding more or less sugar, depending on your taste. Store in the fridge for up to 3 days without the fruit topping.
