  • 6 cups fresh or frozen blackberries
  • 1/2 cup honey
  • 1 tablespoon lemon juice
  • 12 tablespoons dried lavender
  • 1 cup melted coconut oil
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 2 sticks (16 tablespoons) salted butter, at room temperature
  • 1 1/2 cups powdered sugar
  • 6 ounces white chocolate, melted and cooled
  • 1 teaspoon vanilla extract

Instructions

  1. To make the jam, combine blackberries, honey, lemon juice, and dried lavender in a pot over high heat. Bring to a boil, then mash the berries. Cook until thickened, about 5-8 minutes, then cool.
  2. Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper. Mix together melted coconut oil, sour cream, eggs, sugar, and vanilla until smooth.
  3. Add flour, baking soda, baking powder, and salt to the mixture. Gradually mix in the milk.
  4. Pour the batter into the prepared dish. Dollop blackberry lavender jam over the top and swirl gently with a knife. Bake for 30-35 minutes or until set. Allow to cool completely.
  5. For the frosting, beat together butter and powdered sugar until fluffy. Add melted white chocolate and vanilla, mixing until well combined.
  6. Once the cake is cool, spread more blackberry lavender jam on top. Frost with white chocolate frosting and swirl in more jam if desired. Slice and enjoy!

Notes

Serve with vanilla ice cream or whipped cream, and garnish with fresh blackberries or a sprinkle of dried lavender for an elegant touch.
