Delightful cheesecake bars with a creamy filling and tangy blackberry compote, perfect for any occasion.
Ingredients

- 2 cups Blackberries (fresh or frozen and thawed)
- 1/4 cup Honey
- Juice of 1/2 Lemon
- 2 1/2 cups Graham Cracker Crumbs (about 1 1/2 sleeves)
- 1 stick Butter (melted)
- 1/4 cup Honey
- 16 oz. Cream Cheese (softened to room temperature)
- 3/4 cup Granulated Cane Sugar
- 1/4 cup Sour Cream
- 2 tsp. Vanilla Extract or Vanilla Bean Powder
- 3 large Eggs
- (Optional) 1/3 cup Fresh Blackberries (sliced)
Instructions
- In a large saucepan over medium-high heat, combine blackberries, honey, and lemon juice. If using fresh berries, add 2 tablespoons of water. Bring to a boil and mash the berries.
- Let it simmer for 6-8 minutes until juicy. Blend until smooth. (Optional) Sieve to remove seeds and let cool.
- Preheat oven to 325°F (163°C) and butter a 9×13” sheet pan.
- In a food processor, combine graham cracker crumbs, melted butter, and honey. Press into the prepared pan.
- Bake for 8-10 minutes while preparing the cheesecake filling.
- In a food processor, blend cream cheese, sour cream, sugar, and vanilla until smooth. Gradually add eggs one at a time.
- Pour the mixture over the graham cracker crust.
- Add dollops of blackberry compote and lightly swirl with a knife. (Optional) Top with sliced fresh blackberries.
- Bake until set in the center, about 40 minutes. Let sit in the oven for an additional 10 minutes.
- Refrigerate for 2 hours to overnight. Slice into 16-20 bars to serve.
Notes
Serve chilled, optionally topped with whipped cream and extra blackberry compote. Store in an airtight container in the refrigerator.
