- 3 cups blackberries (divided)
- 1/3 cup sugar
- 3 tsp lemon juice
- 7 tbsp water (divided)
- 2 tbsp cornstarch
- 1 ready-made pie crust
- 1 large egg, whisked
- 1 tbsp water
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a saucepan, combine 2 cups blackberries, sugar, lemon juice, and 3 tablespoons water. Bring to a boil and cook for 3-4 minutes. Add remaining 1 cup blackberries.
- Mix cornstarch with remaining 4 tablespoons water and add to the blackberry mixture. Stir until thickened and let cool for 15 minutes.
- Unroll the pie crust on a floured surface and cut into 3-inch circles. Brush edges with water, add filling, fold in half, and crimp edges with a fork.
- Place hand pies on the baking sheet and brush with whisked egg combined with 1 tablespoon water. Bake for 15-18 minutes or until golden brown. Serve warm.
Notes
Serve warm, with vanilla ice cream or whipped cream if desired. Store in an airtight container for up to three days, or freeze for up to three months.
