- 2 store-bought or homemade pie crusts
- 3 cups fresh or frozen blackberries
- 3/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 3 large eggs
- 1 3/4 cups buttermilk
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
- 1 teaspoon water (for egg wash)
- 1 teaspoon granulated sugar (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C). Lightly spray a 9-inch pie dish with nonstick cooking spray.
- Place one pie crust into the bottom of the pie pan, trimming the edges as needed.
- Arrange the blackberries evenly in the pie crust.
- Prepare the custard filling by blending the sugar, cornstarch, salt, eggs, buttermilk, and vanilla extract in a blender until smooth, about 45 seconds.
- Pour the custard over the blackberries in the pie crust.
- Top the pie with the second pie crust and crimp the edges to seal. Cut an “X” in the center to allow steam to escape.
- In a small bowl, whisk together the egg and water for the egg wash.
- Brush the top crust with the egg wash and sprinkle with granulated sugar.
- Lightly cover the pie with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 25-30 minutes, or until the crust is golden brown.

Notes
For the best flavor, use fresh blackberries when in season. You can substitute other berries as desired.
