Description

Delicious blackberry cinnamon rolls combining warm cinnamon flavors with sweet-tart blackberries, perfect for breakfast or dessert.


Ingredients

  • 240g (1 cup) Whole milk
  • 2 1/2 teaspoons Instant or active dry yeast
  • 50g (1/4 cup) Granulated sugar
  • 530g (4 1/4 cups) All-purpose flour, plus more for dusting
  • 2 large Eggs
  • 1 teaspoon Salt
  • 85g (6 Tablespoons) Unsalted butter, softened to room temperature
  • 300g (10.5 oz) Blackberries
  • 50g (1/4 cup) Granulated sugar (for filling)
  • 1 1/2 Tablespoons Cornstarch
  • 1 Tablespoon Lemon juice
  • Pinch of salt (for filling)
  • 113g (4 oz) Cream cheese, softened to room temperature
  • 30g (2 Tablespoons) Unsalted butter, softened to room temperature (for frosting)
  • 180g (1 1/2 cups) Powdered sugar
  • 3 Tablespoons Blackberry filling
  • 1/2 teaspoon Vanilla extract or paste
  • Pinch of salt (for frosting)

Instructions

  1. In a small saucepan, warm the milk to about 95-104°F (35-40°C) and pour it into the bowl of a stand mixer.
  2. Sprinkle the yeast and sugar over the milk. Let it sit for 5-10 minutes if using active dry yeast.
  3. Add flour, salt, and eggs to the milk mixture. Mix on low speed until a thick dough forms.
  4. Gradually add the softened butter while mixing on medium speed for about 10 minutes.
  5. Shape the dough into a ball, place it in a greased bowl, cover, and let it rise until doubled in size, about 1-1.5 hours.
  6. Cook blackberries, sugar, cornstarch, lemon juice, and salt in a saucepan until thickened. Let cool.
  7. Roll out the risen dough, spread the filling, roll tightly, and slice into 12 pieces.
  8. Cover the rolls and let them rise for another 30-45 minutes.
  9. Preheat the oven to 350°F (175°C).
  10. Bake the rolls for 25 minutes until golden brown.
  11. Beat cream cheese, butter, powdered sugar, blackberry filling, vanilla, and salt until smooth.
  12. Spread frosting over the cooled rolls and serve.

Notes

Best enjoyed fresh and warm. Can be stored in an airtight container for up to 2 days or in the refrigerator for a week. Freezing is also an option for up to 2 months.
