  • 2 1/2 cups blackberries

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×5-inch loaf pan with non-stick spray.
  2. Mash the blackberries with 1/2 cup of sugar until juicy.
  3. In a separate bowl, whisk the eggs with the remaining 1 cup of sugar, then add the oil and the mashed blackberries, mixing well.
  4. Add the flour, baking soda, salt, and cinnamon to the wet mixture and stir until combined.
  5. Pour the batter into the prepared loaf pan and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
