Instructions
- Preheat your oven to 350°F (175°C) and spray a 9×5-inch loaf pan with non-stick spray.
- Mash the blackberries with 1/2 cup of sugar until juicy.
- In a separate bowl, whisk the eggs with the remaining 1 cup of sugar, then add the oil and the mashed blackberries, mixing well.
- Add the flour, baking soda, salt, and cinnamon to the wet mixture and stir until combined.
- Pour the batter into the prepared loaf pan and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
