Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups heavy cream
  • 1 cup semi-sweet chocolate, melted
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/4 cup cocoa powder
  • Garnish: chocolate shavings or cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix the chocolate cookie crumbs and melted butter, and press this mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes and let cool.
  2. In another bowl, whip the heavy cream and powdered sugar until soft peaks form. Fold in the melted chocolate and vanilla extract gently.
  3. In a separate bowl, beat the cream cheese until smooth, then fold in the whipped cream mixture until fully combined.
  4. Pour the mousse over the cooled crust and smooth the top. Refrigerate for at least 4 hours or until set.
  5. Before serving, garnish with chocolate shavings or cocoa powder.

Notes

Make sure the cream cheese is softened. Use high-quality chocolate for best flavor.
