Ingredients

- 8 eggs
- 300 g of sugar
- 200 g of flour
- 50 g of bitter cocoa
- Cherries (quantity to taste)
- 500 ml of milk cream
- 425 g of icing sugar
- 300 g of semi-bitter chocolate
- Cherry liquor (or the one you prefer)
- 1 tsp vanilla essence
Instructions
- Beat the eggs with the sugar until you get a spongy and pale mixture. Incorporate the sifted flour and cocoa, gently mixing.
- Preheat the oven to 180 °C. Grease and flour 3 medium molds. Divide the mixture into 3 equal parts and bake for 15 minutes. Let cool completely.
- Beat the milk cream with icing sugar and vanilla essence until firm peaks form.
- Place the first sponge cake layer as a base and moisten with cherry liquor. Add a layer of whipped cream and cherries. Repeat for the other layers.
- Cover the entire cake with remaining whipped cream and decorate with more cherries and chocolate chips.
Notes
For best results, beat the eggs and sugar until very light and fluffy. Let the cakes cool completely before assembling.
