Description

Ingredients

  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs, separated
  • 1/2 cup (100g) granulated sugar, divided
  • 2 tbsp (30ml) milk
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy whipping cream
  • 2 tbsp (15g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (150g) pitted and halved sweet cherries (fresh or canned)
  • 1/2 cup (120ml) chocolate ganache or melted dark chocolate
  • Extra whipped cream and cherries for garnish
  • Chocolate shavings or curls

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 10×15-inch (25x38cm) jelly roll pan with parchment paper.
  2. Sift together flour, cocoa powder, baking powder, and salt in a small bowl.
  3. In a large bowl, beat egg yolks with half of the sugar until pale and thick. Mix in milk and vanilla extract.
  4. In another bowl, whisk egg whites until soft peaks form, then gradually add remaining sugar; continue beating until stiff peaks form.
  5. Gently fold dry ingredients into the egg yolk mixture, then fold in beaten egg whites until no streaks remain.
  6. Spread the batter evenly in the prepared pan and bake for 10-12 minutes.
  7. Invert the cake onto a kitchen towel dusted with powdered sugar and roll tightly. Let cool completely while rolled.
  8. In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Unroll the cooled cake and spread whipped cream over the surface, leaving a 1-inch border. Scatter cherries over the cream.
  10. Re-roll the cake tightly without the towel and place seam-side down on a serving platter.
  11. Drizzle chocolate ganache over the rolled cake and garnish with whipped cream swirls, cherries, and chocolate shavings.
  12. Refrigerate for at least 1 hour before slicing and serving.

Notes

Tips: Be gentle when folding in egg whites, use quality chocolate for ganache, and dust towels with powdered sugar to prevent sticking.
