- 1 tsp vanilla extract
- 1 cup (240ml) heavy whipping cream
- 2 tbsp (15g) powdered sugar
- 1 tsp vanilla extract
- 1 cup (150g) pitted and halved sweet cherries (fresh or canned)
- 1/2 cup (120ml) chocolate ganache or melted dark chocolate
- Extra whipped cream and cherries for garnish
- Chocolate shavings or curls
Instructions
- Preheat the oven to 375°F (190°C) and line a 10×15-inch (25x38cm) jelly roll pan with parchment paper.
- Sift together flour, cocoa powder, baking powder, and salt in a small bowl.
- In a large bowl, beat egg yolks with half of the sugar until pale and thick. Mix in milk and vanilla extract.
- In another bowl, whisk egg whites until soft peaks form, then gradually add remaining sugar; continue beating until stiff peaks form.
- Gently fold dry ingredients into the egg yolk mixture, then fold in beaten egg whites until no streaks remain.
- Spread the batter evenly in the prepared pan and bake for 10-12 minutes.
- Invert the cake onto a kitchen towel dusted with powdered sugar and roll tightly. Let cool completely while rolled.
- In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cooled cake and spread whipped cream over the surface, leaving a 1-inch border. Scatter cherries over the cream.
- Re-roll the cake tightly without the towel and place seam-side down on a serving platter.
- Drizzle chocolate ganache over the rolled cake and garnish with whipped cream swirls, cherries, and chocolate shavings.
- Refrigerate for at least 1 hour before slicing and serving.

Tips: Be gentle when folding in egg whites, use quality chocolate for ganache, and dust towels with powdered sugar to prevent sticking.
