Description

A delightful combination of rich chocolate cake rolled with luscious whipped cream and juicy cherries, perfect for any occasion.


Ingredients

  • 4 large eggs, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 pinch salt
  • Powdered sugar (for dusting)
  • 1 1/2 cups (360ml) heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh cherries, pitted and halved
  • 2 tbsp cherry syrup or liqueur (optional)
  • Shaved chocolate or chocolate curls
  • Whole cherries (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch (25x38cm) jelly roll pan with parchment paper.
  2. In a large bowl, whisk the eggs and granulated sugar together until thick and pale (5-7 minutes).
  3. Fold in the vanilla extract, flour, cocoa powder, baking powder, and salt.
  4. Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes until a toothpick comes out clean.
  5. Flip the cake onto a kitchen towel dusted with powdered sugar and carefully peel off the parchment paper.
  6. Roll the cake up with the towel and let it cool completely.
  7. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
  8. Once the cake is cool, unroll it and spread whipped cream on top, leaving a border. Scatter the cherries and optionally drizzle with cherry syrup.
  9. Roll the cake back up using the towel.
  10. Transfer to a serving platter and top with more whipped cream, shaved chocolate, and whole cherries.
  11. Chill for at least 1 hour. Slice and serve.

Notes

Best enjoyed fresh; store leftovers in an airtight container for up to three days.
