A delicious dessert that brings together rich chocolate and sweet cherries, perfect for celebrations or a special weekend treat.


Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar (for dusting)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat the eggs and granulated sugar together until thick and pale.
  3. Sift the flour, cocoa powder, baking powder, and salt. Fold this dry mixture into the egg mixture gently.
  4. Spread the batter evenly into the prepared pan and bake for 12-15 minutes.
  5. Once baked, dust a clean towel with powdered sugar, then invert the cake onto it. Roll the cake while it’s warm.
  6. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until you get stiff peaks.
  7. Unroll the cake, spread the whipped cream and cherry pie filling, then roll it back up tightly.
  8. Garnish the top with chocolate shavings and refrigerate for at least 1 hour before serving.

Notes

Roll the cake while it is still warm to help it hold its shape. Use fresh cherries for a fresher taste. Don’t skip the powdered sugar dusting to prevent sticking.
