- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar (for dusting)
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
- Beat the eggs and granulated sugar together until thick and pale.
- Sift the flour, cocoa powder, baking powder, and salt. Fold this dry mixture into the egg mixture gently.
- Spread the batter evenly into the prepared pan and bake for 12-15 minutes.
- Once baked, dust a clean towel with powdered sugar, then invert the cake onto it. Roll the cake while it’s warm.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until you get stiff peaks.
- Unroll the cake, spread the whipped cream and cherry pie filling, then roll it back up tightly.
- Garnish the top with chocolate shavings and refrigerate for at least 1 hour before serving.
Notes
Roll the cake while it is still warm to help it hold its shape. Use fresh cherries for a fresher taste. Don’t skip the powdered sugar dusting to prevent sticking.
