Ingredients

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh cherries, pitted and halved
  • 1/4 cup cherry preserves
  • 1/2 cup dark chocolate shavings
  • Fresh cherries for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and grease it lightly.
  2. In a large bowl, beat the eggs, sugar, and vanilla extract on high speed for 5-7 minutes until thick and pale.
  3. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.
  4. Spread the batter evenly in the prepared pan and bake for 10-12 minutes until the cake springs back when lightly touched.
  5. While warm, turn the cake onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll it tightly in the towel. Let cool completely.
  6. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Unroll the cooled cake and spread a thin layer of cherry preserves, followed by the whipped cream and scatter halved cherries over the cream.
  8. Re-roll the cake without the towel, seam-side down on a serving platter.
  9. Spread a thin layer of whipped cream on the outside, top with dark chocolate shavings and fresh cherries. Chill for at least 1 hour before slicing.

Notes

Use fresh cherries for best flavor. Ensure eggs are at room temperature for better whipping.
