- 4 large eggs, room temperature
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups heavy whipping cream
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh cherries, pitted and halved
- 1/4 cup cherry preserves
- 1/2 cup dark chocolate shavings
- Fresh cherries for garnish
Instructions
- Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and grease it lightly.
- In a large bowl, beat the eggs, sugar, and vanilla extract on high speed for 5-7 minutes until thick and pale.
- Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.
- Spread the batter evenly in the prepared pan and bake for 10-12 minutes until the cake springs back when lightly touched.
- While warm, turn the cake onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll it tightly in the towel. Let cool completely.
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cooled cake and spread a thin layer of cherry preserves, followed by the whipped cream and scatter halved cherries over the cream.
- Re-roll the cake without the towel, seam-side down on a serving platter.
- Spread a thin layer of whipped cream on the outside, top with dark chocolate shavings and fresh cherries. Chill for at least 1 hour before slicing.
Notes
Use fresh cherries for best flavor. Ensure eggs are at room temperature for better whipping.
