Description

Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar (for dusting)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs and granulated sugar until thick and pale.
  3. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Fold this mixture into the egg mixture gently.
  4. Spread the batter evenly in the prepared pan and bake for 12-15 minutes. The cake should spring back when touched.
  5. Dust a clean towel with powdered sugar. Invert the cake onto the towel and peel off the parchment paper, then roll the cake with the towel. Let it cool completely.
  6. Whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  7. Unroll the cooled cake gently and spread the whipped cream evenly over it. Spoon the cherry pie filling on top and roll the cake back up tightly, placing it seam-side down on a platter.
  8. Garnish with chocolate shavings and refrigerate for at least 1 hour before slicing and serving.

Notes

Store any leftover cake in the refrigerator and cover it with plastic wrap or place it in an airtight container.
