- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar (for dusting)
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a large mixing bowl, beat the eggs and granulated sugar until thick and pale.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Fold this mixture into the egg mixture gently.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes. The cake should spring back when touched.
- Dust a clean towel with powdered sugar. Invert the cake onto the towel and peel off the parchment paper, then roll the cake with the towel. Let it cool completely.
- Whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
- Unroll the cooled cake gently and spread the whipped cream evenly over it. Spoon the cherry pie filling on top and roll the cake back up tightly, placing it seam-side down on a platter.
- Garnish with chocolate shavings and refrigerate for at least 1 hour before slicing and serving.
Notes
Store any leftover cake in the refrigerator and cover it with plastic wrap or place it in an airtight container.
