- 1/4 cup unsweetened cocoa powder

- 4 large eggs, room temperature

- 1/4 cup whole milk

- 1/3 cup powdered sugar

- 1 cup cherry pie filling or fresh cherries, pitted and halved
- 2 tbsp cherry syrup or juice
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy whipping cream
- Fresh cherries for garnish
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- Sift the flour, cocoa powder, and baking powder into a bowl.
- In a large bowl, beat the eggs and sugar with a hand mixer until thick and pale (about 5-7 minutes).
- Gently fold in the dry ingredients, followed by the milk and vanilla extract.
- Pour the batter into the prepared pan and bake for 10-12 minutes until it springs back when touched.
- Remove from the oven and roll it up with the parchment paper; let it cool completely.
- For the filling, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form; chill.
- Unroll the cooled sponge cake, spread the cherry filling evenly, and top with whipped cream.
- Carefully roll the cake back up, seam-side down on a platter.
- For the ganache, heat heavy cream until simmering, pour over chocolate chips, stir until smooth, and drizzle over the cake.
- Garnish with fresh cherries and chocolate shavings; chill for at least 1 hour before serving.
Notes
Store in the refrigerator for up to 3-4 days or freeze for a month. Use room temperature eggs for better volume.
