Description

A delightful dessert combining rich chocolate cake, juicy cherries, and fluffy whipped cream, perfect for any occasion.


Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 cup cherry pie filling (or fresh pitted cherries)
  • 1/2 cup chocolate ganache or melted chocolate
  • Whipped cream and fresh cherries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, sift together the flour, cocoa powder, and baking powder.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Gradually add the oil and vanilla extract.
  4. Gently fold the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes or until the cake springs back when touched.
  6. While the cake is still warm, turn it out onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake tightly with the towel. Let it cool completely.
  7. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Unroll the cooled cake and spread a layer of whipped cream over it. Add a layer of cherry filling.
  9. Carefully roll the cake back up and place it seam-side down on a serving platter.
  10. Drizzle chocolate ganache over the top of the roll. Garnish with whipped cream and fresh cherries.
  11. Chill for 1 hour before slicing and serving.

Notes

Dust the kitchen towel with powdered sugar to prevent the cake from sticking. Rolling should be tight but gentle to maintain shape.
