- 3/4 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 4 large eggs
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 1/2 cups heavy whipping cream
- 2 tbsp powdered sugar
- 1 cup cherry pie filling (or fresh pitted cherries)
- 1/2 cup chocolate ganache or melted chocolate
- Whipped cream and fresh cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a bowl, sift together the flour, cocoa powder, and baking powder.
- In another bowl, beat the eggs and sugar until light and fluffy. Gradually add the oil and vanilla extract.
- Gently fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes or until the cake springs back when touched.
- While the cake is still warm, turn it out onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake tightly with the towel. Let it cool completely.
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cooled cake and spread a layer of whipped cream over it. Add a layer of cherry filling.
- Carefully roll the cake back up and place it seam-side down on a serving platter.
- Drizzle chocolate ganache over the top of the roll. Garnish with whipped cream and fresh cherries.
- Chill for 1 hour before slicing and serving.
Notes
Dust the kitchen towel with powdered sugar to prevent the cake from sticking. Rolling should be tight but gentle to maintain shape.
