Description

A delightful dessert that combines rich chocolate and sweet cherries, perfect for special occasions or a sweet treat.


Ingredients

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh cherries, pitted and halved
  • 1/4 cup cherry preserves
  • 1/2 cup dark chocolate shavings
  • Fresh cherries for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a large bowl, beat the eggs, sugar, and one teaspoon of vanilla extract on high speed for 5-7 minutes until thick and pale.
  3. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold this mixture into the egg mixture without deflating it.
  4. Spread the batter evenly in the prepared pan. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
  5. While the cake is warm, turn it out onto a clean kitchen towel that is dusted with powdered sugar. Remove the parchment paper and roll the cake tightly in the towel. Let it cool completely.
  6. Whip the heavy cream, powdered sugar, and remaining vanilla extract until stiff peaks form.
  7. Once the cake is cool, unroll it and spread a thin layer of cherry preserves on top. Then, add the whipped cream and scatter the halved cherries over the cream.
  8. Carefully re-roll the cake without the towel, placing it seam-side down on a serving platter.
  9. Spread a thin layer of whipped cream on the outside and top with dark chocolate shavings and fresh cherries.
  10. Chill in the fridge for at least 1 hour before slicing.

Notes

Store covered in the refrigerator for up to three days. You can freeze the cake before adding whipped cream and toppings for up to a month.
