- 4 large eggs, room temperature
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups heavy whipping cream
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh cherries, pitted and halved
- 1/4 cup cherry preserves
- 1/2 cup dark chocolate shavings
- Fresh cherries for garnish
Instructions
- Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- In a large bowl, beat the eggs, sugar, and one teaspoon of vanilla extract on high speed for 5-7 minutes until thick and pale.
- Sift together the flour, cocoa powder, baking powder, and salt. Gently fold this mixture into the egg mixture without deflating it.
- Spread the batter evenly in the prepared pan. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
- While the cake is warm, turn it out onto a clean kitchen towel that is dusted with powdered sugar. Remove the parchment paper and roll the cake tightly in the towel. Let it cool completely.
- Whip the heavy cream, powdered sugar, and remaining vanilla extract until stiff peaks form.
- Once the cake is cool, unroll it and spread a thin layer of cherry preserves on top. Then, add the whipped cream and scatter the halved cherries over the cream.
- Carefully re-roll the cake without the towel, placing it seam-side down on a serving platter.
- Spread a thin layer of whipped cream on the outside and top with dark chocolate shavings and fresh cherries.
- Chill in the fridge for at least 1 hour before slicing.
Notes
Store covered in the refrigerator for up to three days. You can freeze the cake before adding whipped cream and toppings for up to a month.
