- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar (for dusting)
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
- Beat together the eggs and granulated sugar in a large bowl until thick and pale.
- Sift together flour, cocoa powder, baking powder, and salt, then fold into the egg mixture.
- Spread the batter in the prepared pan and bake for 12-15 minutes.
- Dust a kitchen towel with powdered sugar, invert the baked cake onto it, and roll the cake with the towel to cool.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Unroll the cooled cake, spread the whipped cream on top, add cherry pie filling, and roll back up.
- Place seam-side down on a platter, garnish with chocolate shavings, and refrigerate for at least 1 hour before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for best taste within 2-3 days.
