Description

A delightful dessert that combines chocolate, cream, and cherries, rolled into a beautiful spiral.


Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar (for dusting)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat together the eggs and granulated sugar in a large bowl until thick and pale.
  3. Sift together flour, cocoa powder, baking powder, and salt, then fold into the egg mixture.
  4. Spread the batter in the prepared pan and bake for 12-15 minutes.
  5. Dust a kitchen towel with powdered sugar, invert the baked cake onto it, and roll the cake with the towel to cool.
  6. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  7. Unroll the cooled cake, spread the whipped cream on top, add cherry pie filling, and roll back up.
  8. Place seam-side down on a platter, garnish with chocolate shavings, and refrigerate for at least 1 hour before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for best taste within 2-3 days.
