- 4 large eggs, room temperature
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- Pinch of salt
- 1 tsp vanilla extract

- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup canned cherries, drained
- Whipped cream (for piping)
- 1/2 cup chocolate chips
- 1/4 cup heavy cream (for ganache)

Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch baking sheet with parchment paper.
- Beat the eggs and granulated sugar in a bowl until light and fluffy. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Stir in the vanilla extract. Spread the batter evenly onto the prepared baking sheet. Bake for 10–12 minutes, or until the sponge springs back when lightly touched.
- While still warm, turn the sponge onto a clean towel dusted with cocoa powder. Peel off the parchment paper and roll the cake (with the towel) from one short end. Allow to cool completely.
- Whip heavy cream, powdered sugar, and vanilla extract to stiff peaks. Gently fold in the drained cherries.
- Carefully unroll the cooled sponge. Spread the whipped cream and cherry mixture evenly over the surface. Roll the cake tightly, starting from the same short end. Place seam-side down on a serving platter.
- Melt the chocolate chips and heavy cream in the microwave or on the stovetop, stirring until smooth. Drizzle the ganache over the roll. Pipe whipped cream on top, add maraschino cherries, and sprinkle with shaved chocolate for a stunning finish. Refrigerate for at least 1 hour before slicing.
- Serve chilled and enjoy every decadent bite!
Notes
Make sure your eggs are at room temperature for better volume when beaten. Roll the sponge with the towel while it’s still warm to prevent cracking. Be gentle when folding the whipped cream and cherries to keep it fluffy.
