Description

A delightful twist on the classic dessert, this Black Forest Cheesecake combines rich chocolate and cream cheese flavors with fruity cherries.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup cocoa powder
  • 1/2 cup cherry preserves
  • 1/2 cup chocolate chips, melted
  • 1 cup whipped cream
  • Fresh cherries (for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter together. Press this mixture firmly into the bottom of a springform pan. Bake for 8–10 minutes or until set. Let it cool completely.
  2. In another bowl, beat the softened cream cheese and sugar until smooth. Add in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
  3. Fold in the sour cream, heavy cream, and cocoa powder until combined.
  4. Pour the cheesecake filling over the cooled crust. Bake for 55–60 minutes, until the edges are set and the center is slightly wobbly. Let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  5. Once chilled, spread the cherry preserves evenly over the top, drizzle with melted chocolate chips, and pipe or spoon whipped cream around the edges. Garnish with fresh cherries.

Notes

Use room temperature cream cheese for a smoother filling. Don’t skip the chilling time; this helps the cheesecake set properly.
