Description

A rich and creamy dessert that combines chocolate cheesecake with sweet-tart cherry topping, perfect for any celebration.


Ingredients

  • 1 1/2 cups crushed chocolate cookies
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup cocoa powder
  • 1 can cherry pie filling
  • Whipped cream (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the crushed chocolate cookies with melted butter until well combined and press into the bottom of a springform pan.
  3. In a large mixing bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the sour cream and cocoa powder.
  5. Pour the cheesecake filling over the prepared crust and bake for 55-60 minutes until set.
  6. Turn off the oven and let the cheesecake cool completely inside with the door slightly ajar.
  7. Spread the cherry pie filling evenly over the top once cooled.
  8. Garnish with whipped cream and chocolate shavings and refrigerate for at least 4 hours before serving.

Notes

For best results, use room temperature cream cheese and allow the cheesecake to cool slowly in the oven to prevent cracking. Store covered in the refrigerator for up to one week.
