- 1 1/2 cups crushed chocolate cookies
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup cocoa powder
- 1 can cherry pie filling
- Whipped cream (for garnish)
- Chocolate shavings (for garnish)
Instructions
- Preheat the oven to 325°F (160°C).
- Combine crushed chocolate cookies with melted butter and press into a springform pan for the crust.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well. Stir in sour cream and cocoa powder.
- Pour filling over the crust and bake for 55-60 minutes, until set.
- Cool in the oven with the door slightly cracked.
- Spread cherry pie filling over the cooled cheesecake.
- Garnish with whipped cream and chocolate shavings. Refrigerate for at least 4 hours before serving.
Notes
For a gluten-free version, use gluten-free chocolate cookies. For added richness, mix in finely chopped dark chocolate into the cheesecake filling.
