  • 1 1/2 cups crushed chocolate cookies
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup cocoa powder
  • 1 can cherry pie filling
  • Whipped cream (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine crushed chocolate cookies with melted butter and press into a springform pan for the crust.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well. Stir in sour cream and cocoa powder.
  4. Pour filling over the crust and bake for 55-60 minutes, until set.
  5. Cool in the oven with the door slightly cracked.
  6. Spread cherry pie filling over the cooled cheesecake.
  7. Garnish with whipped cream and chocolate shavings. Refrigerate for at least 4 hours before serving.

Notes

For a gluten-free version, use gluten-free chocolate cookies. For added richness, mix in finely chopped dark chocolate into the cheesecake filling.
