- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 cups cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup cocoa powder
- 1/2 cup cherry preserves
- 1/2 cup chocolate chips, melted
- 1 cup whipped cream
- Fresh cherries (for garnish)
Instructions
- Preheat your oven to 325°F (165°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a springform pan. Bake for 8–10 minutes until set. Then, cool completely.
- In another bowl, beat cream cheese and sugar until smooth. Add vanilla and then eggs one at a time, mixing well after each addition. Fold in sour cream, heavy cream, and cocoa powder until everything is nicely combined.
- Pour the filling over the cooled crust. Bake for 55–60 minutes or until the edges are set, and the center is slightly wobbly. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Once chilled, spread cherry preserves evenly over the top of the cheesecake. Drizzle with melted chocolate chips. Pipe or spoon whipped cream around the edges and garnish with fresh cherries.
Notes
Make sure your cream cheese is at room temperature for a smoother filling. To avoid cracks, don’t overmix the filling after adding the eggs.
