Description

A delicious German dessert that combines rich chocolate cake with cherries and whipped cream, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup boiling water
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups chopped cherries
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar (for filling)
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for cream)
  • Chocolate chips (for garnish)
  • Maraschino cherries (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the vegetable oil, eggs, and vanilla extract and whisk until combined. Slowly stir in the boiling water until smooth.
  3. Pour the batter into the prepared pans and bake for 30-35 minutes. Let the cakes cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
  4. For the cherry filling, cook chopped cherries with water and sugar in a saucepan over medium heat. Mix cornstarch with a little water, stir into the cherry mixture to thicken, then let cool.
  5. In a separate bowl, beat heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  6. Assemble the cake by placing one layer on a plate and spreading cherry filling on top, followed by a layer of whipped cream. Place the second cake layer on top and cover the entire cake with the remaining whipped cream.
  7. Decorate with chocolate chips and maraschino cherries on top.

Notes

Use high-quality cocoa powder for better flavor. Chill mixing bowl and beaters before whipping cream for optimal results.
