- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 can cherry pie filling
- Whipped cream
- Chocolate shavings
Instructions
- Set the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract to the dry ingredients and mix well.
- Gradually stir in the boiling water until well combined — note that the batter will be thin.
- Pour the batter into the prepared cake pans and place in the oven for 30-35 minutes, until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Place one cake layer on a serving plate and spread cherry pie filling over the top.
- Add the second layer on top, then cover the entire cake with whipped cream, ensuring all sides are covered.
- Garnish with chocolate shavings and additional cherry pie filling, if desired.
- Chill the cake for at least 1 hour before serving to allow the flavors to meld.
Notes
Serve chilled. Store in an airtight container in the refrigerator for 3-4 days.
