Ingredients

  • 1 3/4 cups cane sugar
  • 2 1/2 tsp baking soda
  • 1/8 tsp fine sea salt
  • 1 1/2 cups almond milk (or other dairy-free milk)
  • 3/4 cup avocado oil (or other neutral vegetable oil)
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1/3 cup Biscoff cookie butter
  • 2 1/2 tbsp almond milk for Biscoff batter
  • 6 tbsp vegan butter
  • 2 tbsp vegetable shortening
  • 2 tbsp Biscoff cookie butter for frosting
  • 3 cups powdered sugar
  • 1 tsp vanilla extract for frosting
  • 12 tbsp almond milk for frosting
  • 1/3 cup Biscoff cookie butter for assembling
  • 1/2 cup Biscoff cookie crumbs
  • A few Biscoff cookies for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
  2. In a large bowl, mix flour, cane sugar, baking soda, and sea salt.
  3. In a separate bowl, whisk together almond milk, avocado oil, lemon juice, and vanilla extract until smooth.
  4. Divide the batter into two bowls. Mix Biscoff cookie butter and 2 1/2 tbsp almond milk into the smaller portion.
  5. Pour batter into pans by alternating spoonfuls of vanilla and Biscoff batter to create a marbled effect.
  6. Bake for 20-25 minutes until a toothpick comes out clean. Cool for 10 minutes in the pans, then transfer to a cooling rack and chill in the fridge.
  7. For the frosting, cream together vegan butter, vegetable shortening, and Biscoff cookie butter. Gradually add powdered sugar and vanilla extract. Adjust with almond milk until you reach your desired consistency.
  8. To assemble, place one cake layer onto a plate, frost the edges, add Biscoff cookie butter in the center, and top with the second layer. Frost the entire cake and decorate with cookie crumbs and cookies on top.
  9. Store in the fridge for up to 4 days or freeze for 1 month.

Notes

For best results, ensure all ingredients are at room temperature. Adjust almond milk quantity if the batter is too thick. Try adding cocoa powder for a chocolate variation.
