Delightful no-bake truffles combining cookie butter and white chocolate for a sweet, creamy treat.
Ingredients

- 1 (8-ounce) package cream cheese, softened
- 1 (10- to 12-ounce) package white chocolate, finely chopped
- 2 tablespoons Biscoff cookie butter (optional topping)
- Biscoff cookies for crumbling
Instructions
- Line a baking sheet with parchment paper and set aside.
- Place Biscoff cookies in a food processor and pulse until finely crumbled.
- Heat 1/4 cup of cookie butter in a microwave-safe bowl for 15-20 seconds and stir well.
- Add the melted cookie butter and cream cheese to the food processor with the cookie crumbs and pulse until combined.
- Scoop dough and roll it into 1-inch balls, placing them on the prepared baking sheet.
- Chill the truffles in the fridge for at least 60 minutes or 20 minutes in the freezer.
- Melt white chocolate in the microwave in 30-second increments, stirring until smooth.
- Dip each truffle in the melted white chocolate and place them back on the parchment paper.
- Return to the fridge for another hour until set.
- Drizzle with melted cookie butter if desired, chill again, and enjoy.
Notes
Make sure cream cheese is at room temperature for easier mixing. You can also try using milk chocolate for dipping.
