Description

Delightful no-bake truffles made with Biscoff cookies and cream cheese, perfect for any occasion.


Ingredients

  • 1 cup Biscoff cookie crumbs, finely ground
  • 1 cup cookie butter (Biscoff spread)
  • 4 ounces cream cheese, room temperature
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup cookie butter (Biscoff spread) for coating
  • 8 ounces white chocolate, chopped

Instructions

  1. Pulverize the Biscoff cookies in a food processor or blender until finely ground.
  2. In a mixing bowl, beat together room temperature cream cheese and cookie butter until smooth.
  3. Add the ground cinnamon and cookie crumbs, then mix until fully combined (the mixture may look slightly crumbly).
  4. Using a 1-inch cookie scoop, portion out the dough onto a parchment-lined sheet pan.
  5. Squeeze each portion in your hand to form a compact ball, then roll it into a smooth ball. Repeat with the remaining dough.
  6. Place the tray of truffles in the freezer for 15-30 minutes to harden.
  7. Melt the white chocolate and remaining cookie butter together in a heatproof bowl. Microwave in 30-second intervals, stirring between each, until smooth. Alternatively, use a double boiler (Bain Marie) to melt the mixture.
  8. Dip each frozen truffle into the melted chocolate using dipping tools or forks, ensuring it’s fully coated. Let excess chocolate drip off before placing the truffle back on the tray.
  9. Once all truffles are coated and set, drizzle additional chocolate over the top and sprinkle with Biscoff cookie crumbs if desired.
  10. Chill the truffles in the fridge to set the coating. Once firm, break off any excess chocolate before storing.

Notes

Store Biscoff Truffles in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.
