Description

Delicious chocolate cookies filled with creamy Biscoff cookie butter, soft and chewy with a unique twist.


Ingredients

  • 1/2 cup salted butter
  • 1/2 cup brown sugar
  • 1/2 cup white granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/3 cup semi-sweet chocolate chips, melted
  • 1/2 cup cocoa powder, sifted
  • 2 1/2 cups all-purpose flour, sifted
  • 1 tsp baking soda
  • 1/2 cup mini chocolate chips
  • Biscoff cookie butter for filling (about 1/2 cup)
  • 15 Biscoff cookies, crushed for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking sheet by lining it with parchment paper or spraying it with cooking spray.
  2. Cream together the butter, brown sugar, and white granulated sugar in a stand mixer until light and creamy (about 3 minutes).
  3. Add the eggs one at a time, mixing until fluffy. Add the vanilla and salt, mixing well.
  4. Melt the semi-sweet chocolate chips and add to the batter, mix until fully combined.
  5. Sift in the cocoa powder and mix on low speed. Add the flour and baking soda, mixing until no flour pockets remain. Fold in the mini chocolate chips.
  6. Let the dough sit for 10 minutes to firm up slightly.
  7. Crumble the Biscoff cookies into fine crumbs and set aside.
  8. Scoop out a ball of dough, press an indent in the center, fill with Biscoff cookie butter, and seal the edges. Roll in the Biscoff cookie crumbs.
  9. Place dough balls on the prepared baking sheet, spacing them about 1 inch apart.
  10. Bake for 10-12 minutes, until the edges are cracked. Let cool for at least 10 minutes before serving.

Notes

Store cookies in an airtight container for up to a week, or freeze with parchment between layers.
