Ingredients

  • 1 (10 oz) package frozen chopped spinach, thawed & drained
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 (8 oz) can water chestnuts, drained & chopped
  • 1 packet dry vegetable soup mix (like Knorr)
  • 1/4 cup diced red bell pepper (optional)
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • Crusty bread or crackers for serving

Instructions

  1. In a large bowl, mix the sour cream, mayonnaise, and soup mix until well combined.
  2. Stir in the chopped spinach and water chestnuts.
  3. If using red bell pepper, add it now.
  4. Season the mixture with garlic powder, salt, and pepper. Mix well.
  5. Chill for at least 60 minutes before serving to let the flavors blend.
  6. Serve in a bowl surrounded by chunks of bread or crackers.

Notes

Make sure to thaw and drain the spinach to avoid a watery dip. For extra flavor, consider adding shredded cheese or a dash of hot sauce.
