Ingredients

- 1 (10 oz) package frozen chopped spinach, thawed & drained
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 (8 oz) can water chestnuts, drained & chopped
- 1 packet dry vegetable soup mix (like Knorr)
- 1/4 cup diced red bell pepper (optional)
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Crusty bread or crackers for serving
Instructions
- In a large bowl, mix the sour cream, mayonnaise, and soup mix until well combined.
- Stir in the chopped spinach and water chestnuts.
- If using red bell pepper, add it now.
- Season the mixture with garlic powder, salt, and pepper. Mix well.
- Chill for at least 60 minutes before serving to let the flavors blend.
- Serve in a bowl surrounded by chunks of bread or crackers.
Notes
Make sure to thaw and drain the spinach to avoid a watery dip. For extra flavor, consider adding shredded cheese or a dash of hot sauce.
