Description

A fresh and vibrant dish combining classic Caprese flavors with pasta.


Ingredients

  • Pasta of choice
  • Cherry tomatoes, halved
  • Fresh mozzarella balls

  • 1/4 cup balsamic vinegar
  • 23 Tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, and basil leaves.
  3. In a separate bowl, whisk together olive oil, balsamic vinegar, lemon juice, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the pasta salad and toss to combine.
  5. Serve immediately or refrigerate for later.
