Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries (pureed)
  • 1/2 cup heavy cream
  • 1 cup vanilla wafer crumbs (or crushed graham crackers)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup granulated sugar
  • 3 tbsp unsalted butter (melted)
  • 1 cup fresh strawberries (sliced)
  • 1/4 cup strawberry jam or puree

Instructions

  1. Preheat your oven to 325°F (165°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let it cool.
  2. In a large bowl, beat the softened cream cheese and sour cream until smooth. Add sugar and mix well. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract and pureed strawberries. Gradually add heavy cream and mix until smooth.
  3. In another bowl, combine the vanilla wafer crumbs, shredded coconut, sugar, and melted butter. Stir until everything is mixed well and crumbly.
  4. Pour the cheesecake filling onto the cooled crust. Sprinkle the crunch topping evenly on top of the cheesecake. Bake for 50-55 minutes, until the center is set but still slightly wobbly. Turn off the oven and let the cheesecake cool at room temperature for 1 hour. Then, place it in the fridge to chill for at least 4 hours or overnight.
  5. In a small saucepan, heat strawberry jam or puree until it turns into a thick syrup. Cool it slightly and drizzle it over the top of the chilled cheesecake. Add fresh strawberry slices on top.

Notes
