A stunning dessert combining rich chocolate cake layers, sweet berry compote, and glossy chocolate ganache.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mixed berry compote
- 1 cup semi-sweet chocolate, chopped
- 1/2 cup heavy cream
- Fresh berries (such as strawberries, raspberries, or blueberries)
- Powdered sugar
- Mint leaves
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter until creamy. Add the milk, eggs, and vanilla extract, and beat until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans before transferring to a wire rack.
- In a small saucepan, heat the heavy cream until it begins to boil.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes.
- Stir until the chocolate is fully melted and the mixture is smooth.
- Place one cake layer on a serving plate. Spread half of the mixed berry compote over the top. Place the second cake layer on top.
- Frost the entire cake with the remaining berry compote.
- Drizzle the chocolate ganache over the top of the cake, allowing it to drip down the sides.
- Top the cake with fresh berries, dust with powdered sugar, and add mint leaves.
- Serve slices of the cake and enjoy the blend of flavors!
Notes
For a richer chocolate flavor, use high-quality chocolate for the ganache. Store leftovers in an airtight container in the refrigerator.
