Description

A stunning dessert combining rich chocolate cake layers, sweet berry compote, and glossy chocolate ganache.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berry compote
  • 1 cup semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • Fresh berries (such as strawberries, raspberries, or blueberries)
  • Powdered sugar
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter until creamy. Add the milk, eggs, and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans before transferring to a wire rack.
  6. In a small saucepan, heat the heavy cream until it begins to boil.
  7. Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes.
  8. Stir until the chocolate is fully melted and the mixture is smooth.
  9. Place one cake layer on a serving plate. Spread half of the mixed berry compote over the top. Place the second cake layer on top.
  10. Frost the entire cake with the remaining berry compote.
  11. Drizzle the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  12. Top the cake with fresh berries, dust with powdered sugar, and add mint leaves.
  13. Serve slices of the cake and enjoy the blend of flavors!

Notes

For a richer chocolate flavor, use high-quality chocolate for the ganache. Store leftovers in an airtight container in the refrigerator.
