  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berry compote
  • 1 cup semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • Fresh berries (such as strawberries, raspberries, or blueberries)
  • Powdered sugar
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter. Add the milk, eggs, and vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool completely.
  6. For the chocolate drip, heat the heavy cream in a saucepan until boiling. Pour it over the chopped chocolate, wait for 2 minutes, then stir until smooth.
  7. To assemble the cake, layer one cake on a serving plate, spread half of the berry compote over it, and add the second layer. Frost the top with the remaining compote and drizzle with chocolate ganache.
  8. Garnish with fresh berries, powdered sugar, and mint leaves before serving.

Notes

Ensure all ingredients are at room temperature. Don’t overmix the batter after adding dry ingredients. Customize compote with different fruits or add nuts for extra crunch.
