A delightful dessert that combines rich chocolate with sweet and tangy mixed berries, perfect for celebrations or satisfying a sweet tooth.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berry compote
  • 1 cup semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • Fresh berries (strawberries, raspberries, blueberries)
  • Powdered sugar
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter. Add milk, eggs, and vanilla extract, mixing until combined.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean. Allow the cakes to cool completely.
  6. To make the chocolate drip, heat heavy cream in a saucepan until boiling. Pour it over chopped chocolate, wait for 2 minutes, and stir until smooth.
  7. To assemble the cake, layer one cake on a serving plate, spread half of the berry compote over it, and add the second layer. Frost the top with remaining compote and drizzle with chocolate ganache.
  8. Garnish with fresh berries, powdered sugar, and mint leaves before serving.

Notes

Store any leftover cake in an airtight container in the refrigerator for up to 3 days. It can be frozen for up to a month if wrapped tightly.
