A refreshing and colorful salad featuring sweet watermelon, juicy berries, and unique dragon fruit, perfect for hot days.


Ingredients

  • 3 cups watermelon, cut into 1-inch pieces
  • 2 cups strawberries, sliced
  • 2 cups blueberries
  • 2 cups raspberries
  • 1 dragon fruit, halved and scooped
  • 2 cups cherries, pitted and halved
  • 34 fresh mint leaves, roughly chopped
  • 12 teaspoons poppy seeds, as desired

Instructions

  1. Cut the watermelon into 1-inch pieces or use a melon baller for fun shapes.
  2. Slice the strawberries, pit and halve the cherries, and scoop out the dragon fruit into balls or cubes.
  3. In a large bowl, gently toss together the watermelon, strawberries, blueberries, raspberries, dragon fruit, and cherries.
  4. Sprinkle the mint leaves and poppy seeds over the fruit.
  5. Gently toss the salad to distribute the mint and poppy seeds evenly.
  6. Serve immediately or chill in the refrigerator until ready to serve.

Notes

For an extra touch, add a drizzle of honey or a squeeze of lime juice. Store leftovers in an airtight container in the fridge and enjoy within 1-2 days.
