A delightful dessert combining layers of fluffy cake, fresh berries, and creamy mascarpone.
Ingredients

- 1 pound cake or sponge cake, cubed
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries
- 1/2 cup berry syrup or fruit preserves (lightly warmed)
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- Fresh mint leaves (for garnish)
Instructions
- In a bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form. Add the mascarpone cheese and mix until smooth and fluffy.
- In a glass trifle dish, layer half of the cake cubes. Drizzle some syrup over the cake, then add a mix of berries and a layer of mascarpone whip. Repeat these layers.
- Finish with a generous layer of mascarpone whip. Top with fresh berries and another drizzle of syrup.
- Add fresh mint leaves on top for decoration. Chill for at least 60 minutes before serving for the best texture.
Notes
Use a variety of berries for color. Can substitute mascarpone with cream cheese. Best enjoyed fresh.
