A delightful dessert combining layers of fluffy cake, fresh berries, and creamy mascarpone.


Ingredients

  • 1 pound cake or sponge cake, cubed
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1/2 cup berry syrup or fruit preserves (lightly warmed)
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh mint leaves (for garnish)

Instructions

  1. In a bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form. Add the mascarpone cheese and mix until smooth and fluffy.
  2. In a glass trifle dish, layer half of the cake cubes. Drizzle some syrup over the cake, then add a mix of berries and a layer of mascarpone whip. Repeat these layers.
  3. Finish with a generous layer of mascarpone whip. Top with fresh berries and another drizzle of syrup.
  4. Add fresh mint leaves on top for decoration. Chill for at least 60 minutes before serving for the best texture.

Notes

Use a variety of berries for color. Can substitute mascarpone with cream cheese. Best enjoyed fresh.
