- 1 cup (150g) fresh strawberries, hulled and sliced
- 1 cup (150g) fresh blueberries
- 1 cup (150g) fresh raspberries
- 2 tbsp granulated sugar (optional, for macerating the berries)
- Mint leaves (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream softened butter and sugar until light and fluffy.
- Add eggs one at a time, then stir in vanilla extract.
- Gradually add dry ingredients alternating with milk, mixing until just combined.
- Divide batter between pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat softened butter until creamy, then gradually add powdered sugar.
- Mix in vanilla and salt, then adjust consistency with heavy cream.
- For the berries, toss with sugar if using and let sit for 15-20 minutes.
- Assemble the cake: place one layer on a serving plate, frost the top, add the second layer, then apply a crumb coat and chill.
- Frost the entire cake after chilling, then top with macerated berries and garnish with mint leaves.
- Slice and serve chilled.
Notes
Ensure butter is softened to room temperature for easy mixing. Use the spoon-and-level method for measuring flour to avoid packing it. Do not overmix the batter to maintain moisture in the cake.
