  • 24 tbsp heavy cream (adjust for desired consistency, for frosting)
  • Pinch of salt (for frosting)
  • 1 cup (150g) fresh strawberries, hulled and sliced
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries
  • 2 tbsp granulated sugar (optional, for macerating the berries)
  • Mint leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Gradually add dry ingredients alternating with milk, mixing until just combined.
  6. Divide batter between pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat softened butter until creamy, then gradually add powdered sugar.
  10. Mix in vanilla and salt, then adjust consistency with heavy cream.
  11. For the berries, toss with sugar if using and let sit for 15-20 minutes.
  12. Assemble the cake: place one layer on a serving plate, frost the top, add the second layer, then apply a crumb coat and chill.
  13. Frost the entire cake after chilling, then top with macerated berries and garnish with mint leaves.
  14. Slice and serve chilled.
