Description

A delightful no-bake dessert that layers luscious mascarpone cream with fresh berries and ladyfingers.


Ingredients

Scale
  • 1/2 lb blueberries
  • 1 lb blackberries
  • Juice of 2 lemons
  • 4 tbsp honey (adjust to taste)
  • 2 tsp vanilla extract
  • 2 tbsp water
  • 1 lb mascarpone cheese
  • 4 organic free-range egg yolks
  • 5 tbsp granulated sugar (4 tbsp for yolks, 1 tbsp for whipped cream)
  • 3/4 cup heavy cream
  • 6 oz ladyfingers
  • Fresh blackberries for garnish
  • Fresh basil leaves for garnish
  • Lilac flowers (optional, for garnish)

Instructions

  1. Make the Berry Sauce: In a small saucepan, combine blackberries, blueberries, lemon juice, vanilla extract, honey, and 2 tbsp of water. Simmer on low heat, covered, for about 5-7 minutes until the blueberries burst. Let it cool and strain to separate solids from the liquid. Set aside both.
  2. Whip the Cream: With a stand mixer and whisk attachment, whip heavy cream with 1 tbsp of sugar until soft peaks form. Refrigerate until ready.
  3. Prepare the Mascarpone Cream: In a bowl, whisk egg yolks and the remaining 4 tbsp sugar until light and fluffy. Gradually add mascarpone cheese, mixing until smooth. Gently fold the whipped cream into the mixture using a spatula.
  4. Combine with Berry Solids: Divide the mascarpone mixture into two bowls. Add the reserved berry solids to one bowl and fold gently.
  5. Assemble the Trifle: Lightly dip ladyfingers in the reserved berry sauce and place in serving glasses or a trifle dish. Layer with the berry mascarpone mixture, then the plain mascarpone mixture. Repeat layers until all ingredients are used.
  6. Chill and Garnish: Refrigerate the trifle for at least 2 hours or until set. Before serving, garnish with fresh blackberries, basil leaves, and lilac flowers (if using). Enjoy!

Notes

Use fresh, ripe berries for the best flavor and adjust sweetness of the berry sauce as desired.
