- 1/2 lb blueberries
- 1 lb blackberries
- Juice of 2 lemons
- 4 tbsp honey
- 2 tsp vanilla extract
- 2 tbsp water
- 1 lb mascarpone cheese
- 4 organic free-range egg yolks
- 5 tbsp granulated sugar
- 3/4 cup heavy cream
- 6 oz ladyfingers
- Fresh blackberries for garnish
- Fresh basil leaves for garnish
- Lilac flowers (optional, for garnish)
Instructions
- Make the Berry Sauce: In a small saucepan, combine blackberries, blueberries, lemon juice, vanilla extract, honey, and 2 tbsp of water. Simmer on low heat, covered, until the blueberries burst and the berries release their juices, about 5-7 minutes. Let it cool, then strain to separate the solids from the liquid. Set both aside.
- Whip the Cream: Using a stand mixer with a whisk attachment, whip the heavy cream with 1 tbsp of granulated sugar until soft peaks form. Refrigerate until ready to use.
- Prepare the Mascarpone Cream: In a bowl, whisk together the egg yolks and the remaining 4 tbsp of granulated sugar until light and fluffy. Gradually add the mascarpone cheese, beating until smooth. Gently fold the chilled whipped cream into the mascarpone mixture.
- Combine with Berry Solids: Divide the mascarpone mixture into two bowls. Add the reserved solid berries from the berry sauce to one bowl and fold gently to combine.
- Assemble the Trifle: Dip the ladyfingers lightly in the reserved berry sauce and place them in the bottom of your serving glasses or trifle dish. Add a layer of the berry mascarpone mixture, followed by a layer of the plain mascarpone mixture. Repeat until you’ve used all the ingredients.
- Chill and Garnish: Refrigerate the trifle for at least 120 minutes or until fully set. Before serving, garnish with fresh blackberries, basil leaves, and lilac flowers (if using). Serve chilled and enjoy this refreshing dessert!
Notes
Use fresh, ripe berries for the best flavor. Be gentle when folding the whipped cream into the mascarpone to keep the mixture light and airy.
