  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup mixed berries (strawberries, blueberries, or raspberries)
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Instructions

  1. For the Berry Swirl: In a small saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries soften and the mixture thickens slightly. If desired, strain the sauce to remove seeds and set aside to cool.
  2. For the Crust: Preheat the oven to 325°F (165°C) and line a 12-cup muffin tin with paper liners. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Spoon about 1 tablespoon of this mixture into each muffin cup, pressing down to form a layer. Bake for 5 minutes, then let them cool.
  3. For the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Then, add vanilla extract and sour cream. Spoon the cheesecake batter into each cooled crust, filling about three-quarters full. Drizzle about 1/2 teaspoon of the berry swirl on top of each and swirl with a toothpick.
  4. Bake for 15-18 minutes, until the centers are slightly jiggly. Allow to cool for 30 minutes, then chill in the refrigerator for at least 2 hours before serving.
  5. Store any leftovers in an airtight container for up to 5 days.
