  • 225g (1 1⁄2 cups) fresh blackberries
  • Juice of half a lemon
  • 2 tbsp cold water
  • 100g (1/2 cup) caster or fine granulated sugar
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 180ml (3⁄4 cup) double (heavy) cream
  • 2 x 225g (2 x 8 oz) packs of Philadelphia cream cheese
  • 1 tsp vanilla extract
  • 85g (3⁄4 cup) confectioner’s sugar
  • Zest of one lemon

Instructions

  1. Prepare the Biscuit Base: Crush the digestive biscuits or graham crackers into fine crumbs. Mix with melted butter, light brown sugar, and a pinch of salt.
  2. Make the Berry Layer: In a saucepan, combine blueberries, blackberries, lemon juice, water, and sugar. Heat for 5 minutes, stir in cornstarch mixture, and cook until thickened.
  3. Whisk the Cheesecake Layer: Whisk heavy cream until stiff peaks, then add cream cheese, vanilla extract, and confectioner’s sugar, mixing until smooth.
  4. Assemble the Cheesecakes: Divide cookie crumbs between mason jars, press down, fill with cheesecake mixture, and top with berry mixture.
  5. Garnish and Serve: Sprinkle with lemon zest and serve immediately or refrigerate until ready.
