- 4 tbsp unsalted butter, melted
- 3 tbsp light brown sugar
- Pinch of salt
- 175g (1 cup) fresh blueberries
- 225g (1 1⁄2 cups) fresh blackberries
- Juice of half a lemon
- 2 tbsp cold water
- 100g (1/2 cup) caster or fine granulated sugar
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- 180ml (3⁄4 cup) double (heavy) cream
- 2 x 225g (2 x 8 oz) packs of Philadelphia cream cheese
- 1 tsp vanilla extract
- 85g (3⁄4 cup) confectioner’s sugar
- Zest of one lemon
Instructions
- Prepare the Biscuit Base: Crush the digestive biscuits or graham crackers into fine crumbs. Mix with melted butter, light brown sugar, and a pinch of salt.
- Make the Berry Layer: In a saucepan, combine blueberries, blackberries, lemon juice, water, and sugar. Heat for 5 minutes, stir in cornstarch mixture, and cook until thickened.
- Whisk the Cheesecake Layer: Whisk heavy cream until stiff peaks, then add cream cheese, vanilla extract, and confectioner’s sugar, mixing until smooth.
- Assemble the Cheesecakes: Divide cookie crumbs between mason jars, press down, fill with cheesecake mixture, and top with berry mixture.
- Garnish and Serve: Sprinkle with lemon zest and serve immediately or refrigerate until ready.
