A delightful dessert combining fluffy layers of cake with rich cream and fresh berries, perfect for celebrations.

Ingredients

Scale
  • 8 eggs
  • 1 1/2 cups sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 2 tsp corn starch
  • 2 (8 oz) packages cream cheese, softened
  • 1 (8 oz) package mascarpone cheese
  • 3 cups powdered sugar
  • 3/4 tsp almond extract
  • 1 1/4 tsp vanilla extract
  • 2 cups heavy cream
  • 2 cups water
  • 3/4 cup sugar
  • 1 1/2 cups chopped strawberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries

Instructions

  1. Line two 10-inch round cake pans with parchment paper and spray with nonstick spray.
  2. In a stand mixer, beat 8 eggs until foamy, gradually adding 1 1/2 cups sugar and 1 tsp vanilla extract until fluffy.
  3. Sift together 1 1/2 cups flour, 2 tsp baking powder, and 2 tsp corn starch and gently fold into the egg mixture.
  4. Divide the batter between the prepared pans and bake at 350°F (175°C) for 20 minutes. Cool completely.
  5. Slice each cooled cake in half to create 4 layers.
  6. Mix cream cheese, mascarpone, 3 cups powdered sugar, 3/4 tsp almond extract, and 1 1/4 tsp vanilla in a mixer until smooth.
  7. Whip 2 cups heavy cream in a separate bowl until stiff peaks form and fold into the cream cheese mixture. Refrigerate for 1 hour.
  8. In a saucepan, whisk 2 cups water and 3/4 cup sugar, boil then simmer for 15-20 minutes until thickened. Let cool.
  9. Brush cooled syrup on one side of each cake layer.
  10. Layer the cake with Chantilly cream and mixed berries, stacking all 4 layers.
  11. Cover the cake with remaining Chantilly cream and top with extra berries.

Notes

For a more decadent cake, consider adding a layer of lemon curd between the layers.
